I find cabbage to be a very underrated vegetable. It is packed with minerals, vitamins, super hydrating, lots of enzymes which help digestion, fiber and more! It is in full season right now so I decided to share this beauty with you all. This is my own twist on my family recipe. Some may also say that this is a new twist on coleslaw.. you tell me!
Of course, I add it on avocado toast! It is also an easy side to compliment any meal you are preparing for the day.
Ingredients: organic cabbage, organic Brussels sprouts, organic red onions, organic dill, organic cilantro, organic fresh lemon juice, organic olive oil, salt and pepper.
