I am so excited to add these beautiful sun dried tomatoes from Roots Organic.
These have been dried under summer sun, tomatoes were simply sliced in half and left out on sun without any other ingredients.
They are unlike your typical jarred sun dried tomatoes. They are crunchy and definitely need a way to "activate". I left mine in olive oil for about 2 days and they were perfect to add to pretty much any meal. If you cannot wait two days the quickest way to soften them is to add them to boiling water, or slice and sauté with onions just like shown in photo (start high heat and lower down to a little below medium heat).
